Vegan Matcha Cookies

What You'll Need

  • 8 tbsp vegan butter (My personal fave is by the brand Miyoko's)

  • 3/4 cup white sugar

  • 1 chia egg

  • 1 + 1/2 tsp vanilla extract

  • 1 + 1/2 cups all purpose flour

  • 4 tsp matcha powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

Start by preheating your oven to 350 degrees.

In a large mixing bowl, cream together the butter and sugar until equally incorporated. Add the chia egg and vanilla extract, whisking until everything is combined and smooth. Next, in a medium-sized bowl, measure out the flour, matcha powder, baking soda and salt and sift/whisk together until completely combined. Slowly fold in the flour mixture with the creamy buttery mixture until combined.

Using a cookie scooper roll out however many balls your dough will allow (for me it made about 18) and place on the cookie sheet. Using the palm of your hand or the bottom of a glass, slightly flatten the balls and bake for approximately 14 minutes. Once the timer is done, remove from the oven and transfer immediately to a cooling rack to stop the cookies from cooking longer.

Once completely cool, sprinkle with powdered sugar and excess matcha powder!
