CJ's Crumb Cake
If you've been following my blog for a while, you know that all of my baking recipes are vegan. However, today's will not be vegan, but can be easily made vegan by using plant-based replacers for the butter. This recipe is actually my moms- it's her classic crumb cake, which happens to be a real crowd pleaser.
What you'll need
- 1 box of yellow cake mix
- 1lb salted butter, room temperature
- 4 cups flour
- 1 cup sugar
- 1/2 cup dark brown sugar
- 1 tsp vanilla
- 2 tbsp cinnamon
Prepare 1 box of yellow cake mix in a 13"x9" (or so) pan as directed on the box but bake by 1/2 the recommended time PLUS 10 minutes- you have to do some math here; so lets say 'T' is the amount of time it says to cook on the box, to figure out how long you'll need to cook the cake use this equation: (T ÷ 2) + 10. You're welcome.
While the cake begins to bake, prepare your crumbs. Mix together butter, flour, sugar, dark brown sugar, vanilla, and cinnamon until well combined. Form hamburger-like patties and place atop the cake, in addition to rolling some of the mixture between fingers to form crumbs to sprinkle atop the patties and fill in spaces to make even.
Finish baking using the other 1/2 of the recommended time plus 10 minutes. When cool, sprinkle with powdered sugar.
