Vegan S'mores Cookies

This recipe was created because my good friend Julianne L O V E S marshmallows. I had an ample amount of free time over my spring break, so I decided to experiment and created these s'mores cookies for her as a treat- which happen to be vegan! 

This creates fourteen cookies

What you'll need

  • 1/2 cup vegan butter, softened

  • 1 cup brown sugar

  • 1/4 cup almond milk

  • 1 tsp vanilla

  • 1 and 3/4 cup flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 cup chocolate chunks

  • 14 large marshmallows

  • 1/4 cup crushed graham crackers

Preheat your oven to 350 degrees.

With a hand mixer, cream together butter and sugar in a small bowl. Add almond milk and vanilla and stir until equally combined.

In a separate medium sized bowl, mix together flour, baking powder and baking soda. Add the dry ingredients to the wet ingredients to form a dough. Stir in all of the mix-ins: the chocolate chunks, and crushed graham crackers. Form balls on a parchment lined baking sheet. Bake for 10 minutes. 

Remove from oven and place a marshmallow atop each individual cook. Turn on your broiler and place the cookie tray back into the oven on the top rack for about a minute, maybe more, so keep an eye on it.

Once finished baking, transfer to a wire rack and have cookies cool for 10-15 minutes.
